This is an old favorite of my boyfriend Bill's. It is somewhat like Chicken Francese, with the herbs giving it a great depth of flavor. It is quite easy to prepare, too. -- posted by JackieOhNo! Read More

This is from the Food Network. My kids love chicken nuggets and, by making them myself, I know what's really in them. These are a little less fat too, and can be made even more so by using olive oil or cooking in the oven. -- posted by mapaklenk Read More

After trying several chicken marsala recipes I just took what I liked best and made this one. You can use either dry or sweet marsala. I've made it, and liked it, both ways, but I have a slight preference for the dry marsala version. -- posted by Oh!Susannah Read More

This is a Kraft recipe. I am looking for recipes free of all my DD's allergies. This worked very well. I just had to leave out the onions and use my dairy free sour cream for the cream cheese and it turned out quite tasty! -- posted by WI Cheesehead Read More

Put the chicken in the marinade which takes 2 minutes to make, shake up the baggie and then 8 hours later ... grill. Even a in Read More

I like lots of flavor to my chicken, and as with many other chefs, a high temp to start is the key for a crispy crust. I have a very simple olive oil, butter, parsley, salt and pepper rub and then lots of fruit and onions in the cavity which I feel really helps with the flavor. Rather than a rack, just use a couple of thick onion slices or a couple of celery ribs or carrots. It makes a natural rack and add tons of flavor to the drippings. Take advantage of what you have in your fridge. You can always use a traditional roasting rack if you want. But I think it is key to have it raised off t Read More

This tasty chicken salad is from Cuisine at Home magazine. They recommend using a purchased rotisserie chicken, which will yield the amount of chicken meat needed for the recipe. You can also use any type of chicken grilled or roasted at home. Just don't use boiled or canned chicken, because the flavor won't be as good. -- posted by appleydapply Read More
